Standing Rib Roast Garnish

Everybody can do a horseradish sauce or the basic Au Jus as a side for their Rib Roast but here is something keeping with my Blue Cheese fetish.

Garlic Blue Cheese sauce.

3/4 cup heavy cream
1 or 2 cloves of Garlic to taste
6 oz of blue cheese crumbled
pepper to taste


Slice garlic very thinly or use a garlic press
Put cream and garlic in a heavy bottom pan and bring up to a boil
Turn down heat to simmer and add blue cheese
When all the cheese has melted add pepper to taste
Pour into a bowl and refrigerate.
The mixture should set into a thick paste
Take out of fridge 1 hour before serving.

Makes 2 cups.

Sounds good. I love blue cheese. Just tried an irish blue soaked in guinness. My wife abhors it...says it smells bad, which is strange. Her being Thai, some of the stuff she eats is enough to make my stomach turn.
 
I had always wanted to make a rib roast. So recently I bought a Prime rib roast, and made a paste coating of rosemary, thyme, garlic, salt, pepper, and olive oil. It turned out incredible. I would definitely make it again.
