You'll need:

-5 quart pot
-Whole Roaster Chicken
-2lbs Smoked Sausage
-3-5 pounds (depending on amount desired) white rice
-2 packets Yellow Saffron Rice
-1 Large Onion

Dice the onion and add to pot of water, boil water and add whole chicken.

Boil chicken untill falling off the bone(30-40 minutes), then remove, saving the water in the pot.

Pull the meat from the bone, pulling into small pieces, almost shreds.

Slice the smoked sausage and add the chicken and sausage back into the pot with the water from boiling the chicken. Bring back to boil.

Add saffron and white Rice, reduce to low/medium heat, and cover, stirring occasionally to keep rice from burning to bottom of pot.

Check the rice occasionally to see if you need ro remove or add water. The final texture of the rice should be damp, but not soupy.

You can add more saffron for flavor, and add salt and pepper to taste.

3 to 5 lbs of white rice! in a 5 qt pot? Are you sure? :laugh:

Now we talkin'! One of my favorites! I like adding chopped carrots and celery as well, then drizzling with hot sauce. Mmmm..mmm! I might just have to make some of this tomorrow with some biscuits!

My cousin's wife is from South Carolina. She makes this stuff all the time. Very tasty.
