This is my first attempt at smoking bacon and it turned out well. I welcome any suggestions. I brined it in Kosher salt, curing salt, small amounts of garlic powder, pepper and paprika. Smoked with Apple wood chips and a bourbon barrel stave, but I ran out so I finished with a small piece of pecan.

That looks delicious ! I have a great recipe for chocolate covered bacon. Yup, I said it, CHOCOLATE covered BACON. I have dubbed it -"Santa's Secret Stash".
Big hit around the Holidays...
PM if you want it . . . good luck with the smoking.

That's the sexiest video I've ever seen. My favourite part was that minute or so at the end. The actors were totally believable, too. When the meat came out and was slid into that big black tunnel o' smokey love, that's when things got really hot.

"I'm here to fix your smoker, ma'am." Pornamatic gold right there.

We had BLT's Monday at our Herf and the guys went nuts. We had some nice potato bread, tomatoes straight out of the garden and this bacon. Life is good. I guess were are going to buy a case of pork bellies and make a larger batch this wekend.

Nice job! I smoke a lot and have a Weber Water Smoker. Just remember when brining, your salt that is being used plays a big part
in the outcome of the brine. Adjust your brine when uses any of these salts:

Table salt 1 cup to brine
Morton Kosher salt 1 ½ cup would be needed.
Diamond Crystal Kosher salt 2 cups is needed.

It liked great. How was the taste and what wood did you used for smoke?

There are many variations of this recipe. Some place a pork tender loin on top of the sausage, others will sprinkle
a BBQ rub on the outside and drizzle BBQ sauce on the inside on top of the sausage . Their is no right way, just "water ever"
you would like way.

LOL@Bacon Weave. I weaved bacon last weekend. Nothing special, just wanted to broil it with a little maple syrup. Yum!

You won't believe how good it is. The Mrs and I went to Cracker Barrel for breakfast, i ate one slice of their bacon and passed the other two slices to her. It was like eating paper compared to home made.

If you want something good, make your own sausage. Its pretty damn good also. Way better than anything store bought. :D We made close to 40 lbs one morning.
