Yet another appetizer to quench your bacon or Blue cheese desires.

You'll need the following
  • 4 Large Russet Potatoes (peeled)
  • 4 Tablespoons Flour
  • 4 Cloves Fresh Garlic (chopped finely)
  • 2 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1lb of Bacon
  • 4-6 oz Blue Cheese
  • Oil for Frying
Directions
  1. Preheat Oven to 400 degrees.
  2. Cook bacon until crisp, allow cool and then chop.
  3. Peel potatoes and add to a pot of water. Boil for 6-7 minutes until parboiled.
  4. Allow potatoes to dry and cool and then shred them finely with a cheese grater.
  5. Mix flour, salt, pepper and chopped garlic and chopped bacon into the potato mixture.
  6. Assemble the potato mixture into large tots, stuff each tot with 1 teaspoon of blue cheese.
  7. Heat oil in a fry pot to 350 degrees.
  8. Fry each tot for 3-4 minutes until golden brown and crispy on the outside.

Be sure to close up your tot or the blue cheese will run out. Best if served warm. This makes 20 big tots or 25-30 smaller ones.

Is there a blue cheese alternate?

Maybe pepper jack or something?

You are welcome to try anything you want and give us a heads up on how it went. Bacon and blue cheese works just fine for me.

Inch in diameter and about 1.5 inches long

Great. Anything I hate is micro-surgery. The wife is going to love these. Thanks Ray.
