MX's HomeBrewing thread - Thread name Change

Justin, how long does it take you to bring it to a boil? I am in the process of converting to electric and have a 4500 watt element also. Thanks!

    Craft Beer And Cigar Pairings

I agree with you on IPA's Mike, it seems the spicier smokes play will with IPA, much ike spicey food does. I smoked a Padron 1926 #35 natural with Sprecher Octoberfest and it was quite nice.

    HomeBrew: Starter and Stirplates

I use 1 qt starter for ales of normal strength ie 1.050 or lower and 2 qts for higher OG and 2 qts for lagers. You will find your yeast will be healthier and have much more by using a stir plate. I ran my stir plate for long periods, but now I let it run for only a few hrs and get as good or...

Goose Island Bourbon County Brand Vanilla Stout

Yeah, I picked mine up @ Binny's, ask the beer guy as they aren't putting it on the shelf. It seems most are limiting everyone to 2 bottles, unless you know the beer guy fairly well! :whistling:

Goose Island Bourbon County Brand Vanilla Stout

Well I picked some up today and inquired about "Rare", evidently GI will be having a release party for Rare @ the Clybourn Pub where it will be served on tap, then it will be released to stores. Even the pub on Clybourn will be limited to 1- 5 gallon keg of Rare, so it must be rare indeed!! Once...

    What are you brewing?

Sunday I brewed a Porter that came in @ 1.066 and Promash estimated 71 IBU of Fuggle and EKG. Fermenting with a slurry of Wyeast 1028. I can't wait 'til this is ready!

    Second brew.

Sucks about the attenuation prob, Alan. You are correct about aeration/oxygenation helping with that issue. As for it being a bit roasty, I have found that some conditioning time after carbonating has helped my Porters and Stouts mellow out a bit. BTW, well done!

Need some help regarding Three Floyds

Steven, I don't know anyone @ Three Floyds, however as a homebrewer for 14 years I can say without a doubt they do not put grapefruit in their beers. The American "C" type hops they use give a huge grapefruit flavor. I have contacted them, as has Brew Your Own Magazine for assistance in cloning...

    What are you brewing?

The Williams kit looks pretty good to me! I'll be kegging three beers this weekend, a Bitter, a Porter and a brew from a book called " Old British Beers and How To Make Them", the recipe is from 1880, should be real good, then I have to lager a Helles and have that ready for the family at Xmas...

    What are you brewing?

Looks good! Is that your first AG or first in awhile? I ask because getting 74% on the first is doing pretty good, IMO. Next weekend I'm brewing 20 gal with a buddy, a Wee Heavy and an O'Dells 90 Schilling inspired brew.

    Gonna start Home Brewing

Don't knock counter flows either, as I simply use gravity and chill my wort to 60ºF in about 20 mins from boiling. This proves once again that theres as many ways to do things in homebrewing as there are homebrewers! Happy Holidays!!

    Shocking beer?

    Gonna start Home Brewing

Where were you when I first started homebrewing?!! That's a great idea!! Yeah, counterflow is the way to go. Absolutely. I started homebrewing in '95 and enjoy it more today than when I first started. I have been fortunate to meet some great people, go to various fests, worked briefly in a...
