Wild Hogs

I've never had the pleasure of eating one, but I understand they're really good.

I had a gal back in the 70's whose Dad used to hunt and pit cook those wild hogs.
Long day of cooking. Used a ton of vinegar with a "mop" throughout the cooking process.
The meat was delicious, juicy, and tender.
It's been over 40 years, but I feel pretty confident thinking it was the best pork I've ever eaten.
 
I'm probably getting this wrong, but my understanding was it kept the outer meat from charring. We were in Florida.

Very interesting. Gramps used to mop his briskets with a concoction of pickle juice...must have been a similar concept.

Yes, very much a North Carolina thing. Some of the eastern NC barbecue places serve the pork with just vinegar and red pepper flakes.

As a native Texan, and not very well travelled outside the state, I discovered NC BBQ the hard way.

Was at a factory tour in Asheville, and they catered BBQ in for lunch. I was excited until I walked in, and got slapped in the face with the vinegar smell.

It completely stripped my gears, and I couldn't eat it.
 
My last time in TX I saw what I believe to be one of those bad boys dead on the roadside. HUGE!
I wonder how he got over the fence. That's a big problem I have with Texas. There's always a fence. It ain't fair, and those folks should know better.

My guess is that small one would be the best eating. Feral hogs are just moving into my area and I am yet to see one. Word has it they have been seen on the private land I deer and coyote hunt.
Missouri Conservation is asking people to not shoot them, instead report them and they will come out and trap them. They say shooting them will just scatter them and help them multiply and advance.
Land owner told me to choot'em.

They breed like rats. Shoot them all or you will be overrun with them.

Yeah, that's why the State Conservation wants to just trap them all. I know once established you can't get rid of them all. Looks like the young man in the pic knows how to handle that 30/30.
