The general rule 1.5 hours per pound @ 225*. I have seen it take as little as 1hr per pound. Just depends on the meat.

Try double foiling it at 160 degrees til it reach 190. Super tender!

I'll definitely give that a try. I did one last month but it was on the small side so it came out a bit dry. Looking forward to giving it another go tomorrow AM!
