I have 5 polder dual probe thermometers. They have a wire cable that you have to run out through the door. They give you a reading of meat & inside of the smoker and are very accurate. What tempature do you cook your briskets to.

It's hard to tell you what to get because we don't know what you like (mild,medium or full). If you know what you prefer do a search on them to see which fits you best. I would just buy different cigars start smoking them some you will like some you won't but in time you will figure it out...
