16 hours on a brisket is a VERY long time. Most go around 8 hours at 225. You shouldn't ever really go by time but instead internal temp. Try to pull it when it hits around 190 internal.

Just my 2 cents but before you said any store names I would probably give them a call or stop in again and ask to talk to the owner or a manager. Just explain everything and if they are just as much of a douche then they deserve all the lost business that listing their name would do.

Does anyone know if heartfelt will sell just the empty pucks? They sell tubes but I don't see the round humifiers anywhere. I tried calling them but no one answered.
