Cobbler!

My mom bought me a set of Corningware baking dishes for Yule, and . . . well, ya got a tool, ya look for projects, right?

So I've been experimenting with cobblers. This is the first one to come out perfect. :love:

Bourbon Peach-Blackberry cobbler. I'm in dessert heaven.

Easy as could be, once you work out the kinks.

Grease a baking dish. Mix one cup baking mix, one cup sugar, one half-cup milk, one capful of vanilla extract thoroughly. Pour the batter into the dish.

Melt a stick of butter, one shot of bourbon, one tablespoon sugar, and half teaspoons each of ginger, cinnamon, and cornstarch over low heat. Add four cups of sliced peaches (I thaw out frozen ones---two small bags does it) and a small container of blackberries and swish 'em around until all the fruit is well-covered in sauce. Pour it over the batter and cook it in a preheated 350º oven until it's done---the recipe I had called for 45 minutes, but Corningware takes double that.

Freakin' awesome. I'm gonna gain a few pounds here, I think. :laugh:

That looks excellent. I would smother that in French vanilla ice cream :love:
 
Boar, that is almost exactly like my grandmothers recipe for Peach Cobbler.

1 stick butter
1 cup self rising flour
1 cup milk
1 cup sugar
1 tsp. vanilla
cinnamon
1 can peaches


Looks delicious!
