Easy Indian Dishes

I gave up on making "easy" Indian dishes at home other than grilled Tandori Chicken with Basmati rice and a side of Channa Masala (garbanzo beans). There's a Farmers Market next door to the office every Friday so I can get fresh Naan for a great Friday night dinner.

Do you want to make it from scratch? Or do you have access to stuff like Patak's (http://www.pataks.co.uk/)? I think the Patak's Tikka Masala is great and very easy to make.
 
Indian food is great, but would be one of the most bastardized types of cooking I know.
True Indian has different types and styles of dishes for every region. Finding a good restaurant can be a real challenge, I gave up looking and purchased a real good cookbook which I ended up using only as a reference.bookstore
 
What kind of food are you wanting to prepare? I have a few recipes i could give you, depending on what you want to cook.
 
What's so hard about potatoes, beans, squash and corn. Just boil 'em :sign:
