Here is one of my favorite side dishes that happens to be diet friendly as well. It comes in at around 300 calories for the batch and takes about five minutes to make.

1 bag Microwave Peas (Steamfresh or Store varitey) approx 10 ounces
1-2 small cans mushroom pieces packed in water (depends on how much you like mushrooms)
1/2 a mid sized shallot diced small
4 cloves garlic minced
Little bit of EEOV

Prepare microwave peas according to direction on package

In a large pan over mid-high heat, add Olive Oil and shallots. Cook for approx 1 min and add garlic and cook until garlic starts to turn a light white color. This is the important part, you need to open the mushrooms and partially drain the liquid, make sure that some is left in the can. Add that to the shallots and garlic.

Simmer to reduce the liquid, your peas should be done. Add them to the mixture and toss to coat.

You can add a squirt or two of no calorie butter, but I find the mushrooms give off enough butter flavor for me.
