I made some Fried Eggplant last night for the first time.
I sort of winged it and it came out incredible.
Made a simple batter with egg, olive oil, salt & pepper. Soaked in batter then covered in bread crumbs and flour. Fried over low heat (Although I should have gone med-high for more crisp). Served with red marinara. Yum!
