The best I have found is Paul Prudhomme's, which I have used on fish, but nothing else.

I like a good fennel rub on my steak, never tried it on a burger though.

I found this at MSNBC.COM for tilapia, I really like this however I cut back on the cayenne pepper.

Blackened Tilapia ingredients:
3 tablespoons of paprika powder
1 tablespoon of salt
1 tablespoon of onion powder
1 teaspoon of ground white pepper
1 teaspoon of ground black pepper
1 teaspoon of cayenne pepper
1 teaspoon of dried thyme
1 teaspoon of dried oregano
½ teaspoon of celery seed
1 pinch of garlic powder
1 tablespoon of vegetable oil
1 pound of Tilapia fillets

Hey! I don't know how you plan to use it, But here are a few ways I use it.
If I do a pan saute, say with a white sauce, some shrimp, and pork tasso, I always add some blackening spice.

Another way I use it is to add it to Tarter sauce. You do it to taste, and let it meld a day or so.

Also, add it to a shrimp salad. Take an english muffin half, top with a slice of nice tomato, then a scoop of Blackened shrimp salad. Top with a slice of Swiss cheese. Under the broiler, how long, I don't know...don't want the stuff charry :D I love it!
