Salty coffee!?!

There's nothing new under the sun. It was common practice, when I was in the Navy, to put salt and egg shells, fresh from the mess, in with the coffee grounds. The salt tamed the acidity and the egg shells gave a clearer brew.

I was a Barista as a young man, before the coffee craze. This is when a Barista really understood coffee and how the differant grinds, brewing methods, and even how humidity affected your daily grind! I would not add a lot of salt but start within the "pinch" or less realm.

The egg works really well, the albumen helps clear the brew as Doc mentioned. This was also used in what was referred to as Cowboy Coffee, when I was learning that trade. Boiling the water, taking it off the heat, and throw the mess in the pot. It retains a lot of the natural oils and makes great coffee. It's similar to the french press.
 
Well, I tried putting a little sea salt on top of my latte and thought it was OK. It did indeed bring out some additional flavors of the espresso and was very much worth giving a try. I don't know if I'd do this too often, but I'm sure I'll be having another go at it this morning.
 
I love this quote from the article. "Taiwanese traditionally rub salt into fruits to make them taste sweeter and this may explain the latest craving for salt coffee."

Salt acts as a preservative. Just take a bite in an apple and toss some salt on it. It keeps it from turning brown and it doesn't make the fruit taste sweeter. It makes the fruit taste salty, but not sweet. But still interesting.
 
I learned to put a pinch of salt in the Air Force, have to say the acidity was tamed and the coffee tasted better. YMMV.
 
I had salty coffee once, but that was because i misttok the salt bowl for the sugar bowl. That was a suprise and a half!
