Hi all. I am trying to expand my cooking abilities, currently I have a Weber Bullet smoker, and a Weber Performer charcoal grill. What I am looking for is some good HOW-TO smoking ideas and recipes for these Weber's, I have tried smoking some, but they really don't turn out the way I would like them to. So please post some good ideas for me here. Please remember I that I don't have access to huge chunks of wood, I have to go the store to get mine. :D
 
Do you like corn? I have a good recipe for smoked corn if ya like. Smoked sausage is also very good during the summer.
 
sorry not a recipe just a memory of my dad.

he always had this old refrigerator in the yard that he used for smoking his fish (kingfish to be exact). he'd throw his big hunks of hickory in the bottom shut the door and drink the day away.
i never really liked the taste of smoked fish but he must have been doing something right because the neighbors flocked around like vultures when he was doing it.

he never cleaned the damn thing! that's probably why the neighbors loved it.

There's plenty of info at the Weber Bullet site. Weber Bullet Virtual Site

Use Charcoal as your main fuel and add wood chips soaked in water for your smoke. Its all about regulating the temperture. Close to 250 and below you are smoking...... Close to 250 and above you are grilling. Try and keep the temperture as constant as possible. I prefer to attempt maintaining around 215 - 225.
 
I've got a little gizmo that works great for smoking meat (please....no jokes about how hard it is to keep it lit :lookup: ). It's a cast iron box with holes in the lid. I'd guess it's about 1"x3"x4" on the inside. You put wood chips in there and bury it in the coals. No need to soak the chips or anything, you just give it about 10-15 minutes to start smoldering. It works great - you use less wood and don't need to soak it. Don't ask me where I got it from because I have no idea. But if anybody finds it, let me know 'cause mine needs to be retired.

Thanks. I have tried to keep it regulated, the temp that is. I seem to have a hard time doing it. How many coals do you add at the beginning, plus I thought I was to keep the temp close to 190. Just goes to show you how much of a novice I am in smoking food.
