The Saison and Saison Brett are two different beers. The Brett one is a limited edition. Well not that limited, they made like 12,000 bottles. The regular saison is available year round. They're both good.
Boulevard just released the second batch of the Saison Brett. I drank my last bottle of the first batch a couple of weeks ago, the Brett was really coming around. It was also getting very carbonated.
You should store your beers in a cool, dark place. Not too cold however. Beers that are bottle conditioned (bottled with yeast) won't develop if refrigerated. The yeast won't be active. Different styles of beer age in different ways. Hoppy beers become more malty, alcoholic beers tend to mellow...
Dogfish Head Palo Santo Marron. This was a super peppery to me. I think it was from the wood. I seem to have some sort of enhanced pepper tastebud. I get the same thing from Grenache a lot of times. I've got some other DFH brews to try from a recent trade. Hopefully they'll work out a little better.
I just got a package with Juliet and Sophie today. I'm looking forward to trying them. Bourbon County never ceases to amaze me!

Their regular line of beers is pretty solid as well, esp. the IPA, Oatmeal Stout and Brown.

Full Sail Black Gold. This one really surprised me. I've been down on Imperial Stouts lately, but this one is fantastic. Really smooth with great wood flavors from the Bourbon barrel.
