x2... can you do chicken in the oven (like the oven rib recipe in the juice cocoon) and then finish 'em on the grill? any good chicken recipe would be wicked awesome! :D
 
I'm not so much into chicken breasts as I am into chicken wings and legs on the grill.

So, like the others, I'd love to see your tips on chicken, but really like to see some in the wings and legs area.

I may write up something on brisket as well. But I'll probably do that next time I cook one. That is a difficult type of meat to do correctly. Everything from trimming it to start with, and cutting it when its done.

here's a picture of one I did for a good friend of mine in california. He likes to make gourmet meals that are paired with wines etc...really gets into it. He wanted it sliced thick. It was actually difficult for me to cut it like this and keep it together because it was so tender it was litterally falling apart.

You know, I've been wondering about that. I sent out A LOT of ribs. Over 40 racks that week. Really haven't heard from too many people. I hope everyone enjoyed them.
