For those who don't know, we have our own jerky chef right here at CP! His name is Erick, goes by Hillbilly Steaks.

This guy makes by far the best jerky around! Typically, jerky is hard and tough. Not his, it's REALLY moist and tender!

yeah, sorry about that. With the wife being pregnant this summer I haven't been cooking quite as much.

HOWEVER, I am making a big batch this weekend and will post up what I have available...so be ready!
