Roasted pork chops with apples and bourbon reduction

Ingredients
Olive oil
2 large pork chops, bone in
2 apples
2-3 cloves garlic
1 lemon (or lemon juice)
1 or 2 shots bourbon
2 tbsp raisins
Salt and pepper to taste


Preheat oven to 450 F
Warm oven-safe saute pan on stove with olive oil on high heat
Peel and quarter apples, mince garlic
Brown both sides of pork chops and remove from pan (2-3 mins)
Reduce heat, add apples to pan, cook 1 min
Slice lemon in half, squeeze juice into pan, add garlic. Mix together, then turn off heat.
Return pork chops to pan, add bourbon and raisins. If you used a whole lemon, add lemon halves.

Cover with lid and place in oven for 20 minutes.

Remove pork chops, apples and lemon halves.
Reduce sauce at bottom of pan on high heat, salt and pepper to taste

Plate pork chops and apples and drizzle sauce over all.
 
If you drank all the bourbon, you should stay away from your gas stove until you sober up. :)

Seriously, I'd just use some other form of alcohol. Sherry or vermouth are the usual suspects, although you might have to add a little cinnamon before tossing the mess in the oven.
