Dinner last night for 5 friends. Roast pork, chicken cutlets, broccoli with garlic, rice, fried bananas, fried mozzarella with Italian bread crumbs.

Potato, split, fluffed, drenched in melted butter, topped with shredded jack and cheddar, carne asada, guac, pico, and sour cream.

Puffy's cooking tip #124: When planning a luncheon, always bake the pie first. That way, if ya burn the roast, there's always PIE ! (and ice cream)

I love to make sandwiches with my left over meatloaf so I can only guess but that looks like it would make a great sandwich!

Something different: grilled panela cheese & tomatoes over pine nut couscous & field greens. It's based on an Israeli dish but made with a Mexican cheese similar to the one of theirs I couldn't get here.

And oh, man, is it TASTY!
