I've had the best luck with brisket pulling it when it's "probe tender" than based on temperature. Different cuts break down differently, so I haven't had much luck basing it on temp.

True, that is the one consideration for sure. It's also bulletproof though, especially if it'll fit in a flat rate box. I don't think it will be too bad regardless, but I'll do some more research at what shipping rates would actually look like.
