If you agree with the school of thought that essential oils start to evaporate at 68% and lower, then it stands to reason that aging at 65% vice 69%+ could produce differant results. In addition, are we aging to produce a specific result, be that mellowing, rounding or are we trying to preserve the "fresh" flavor profile.
