For the Rhubarb lovers out there

My Rhubarb plants have been loving this seasons weather. Paid them a visit last night and cut a couple stalks for dessert.

Here is a great dessert that is very easy and oh so yummy.

4 cups fresh Rhubarb, chopped.
1 packet Strawberry or Raspberry Jello
1 cup sugar
1 package white or yellow cake mix (18oz. or so package)
1 stick butter
1 1/2 cups water


Place Rhubarb in greased 13x9 baking pan. Mix the Jello and sugar together and sprinkle over the Rhubarb.
Sprinkle the cake mix into the pan, then add the water over the mix. Cut the butter into squares and place over the mix.
Place in a 350 degree oven for 45 minutes. Serve with ice cream or whipped cream.

Ah, rhubarb. When we were kids we would go out at night and liberate it from the neighbors patches. Eat it raw with a little bit of salt. We always looked forward to this activity. Brings back fond memories.

Ah, I love it. When I was in Germany, I had rhubarb wine. Quite unique to say the least.
