Smoker's porn...fresh out of the smoker today...

Brined overnight with brown sugar, maple syrup, sage, thyme, and coriander. Oak smoked for 4 hours followed by 3 more hours of heat in the box.

I'm droolin' like mad but one's for the neighbor who plows our driveway and the other goes in the icebox for later.

It's a pretty simple brine and you're welcome to it...

6 quarts water
1 cup Morton's Kosher salt
¾ cup brown sugar
¾ cup genuine maple syrup
2 tbsp thyme
2 tbsp sage

Heat just enough water to dissolve the salt and sugar. Add syrup. You can add the herbs loose but I tie 'em up in a cheesecloth cachet to keep the breasts clean lookin'. Simmer cachet for about 20 minutes. I leave the cachet in for brining.

Allow mixture to cool or if you want to speed things up, add ice cubes until they don't melt anymore. Add enough water to bring the volume up to 6 quarts. This covers most breasts in my particular stock pot. You may have to adjust for yours.

I brine for about 1-2 hours per pound of turkey breast...or just overnight. I'm not too picky about it as long is it gets a goodly amount of time in the tasty stuff.
