Ok... Hillbilly Steaks, you are the devil (again)! I'm thinking I actually lost the salmon smokeoff. Since then, and after talking with him, I've been using my smoker more and more, and less and less fish is going in it!

Todays project was Boston Butts... with 6 racks of ribs going in tomorrow. Hmmm... I think a nice Siglo VI will be in order tomorrow - Todays was a Shark! :0

As if I didn't have enough to make the dogs drool over... first salmon, then cigars, now smoked meats.

WHEN DOES IT END?!?!?!

Thanks Erick! :thumbs: Nothing like using a smoker to its full potential! I'm thinking my boat launching party will be even better now! And the guys at my station will be getting a treat when we celebrate my 15 year anni this month...

Smoked pork butt is awesome. I usually do at least 2 per weekend. Throw some bologna and sausage in there while you smoke the butts :thumbs:
 
The boston butts are definitely very good. This weekend I actually cooked some Jerky, 6 Racks of Ribs, some experimental beef short ribs, and a Beef Brisket.

It was really a beautiful weekend here, great to be outside!
 
Tradition around work is on your event - hire anniversary, birthday, promotion, etc...- YOU supply the treats. Normly guys do steaks, cake and ice cream, and so on, dependingf on what the day is for. My 15 year hire anniversary is a big one- I'm now eligable to retire with benfits, so the guys will be expecting steaks or the like.

Congrats on the upcomming milestone!!! And I really hope you don't get called out while they are cooking. I have to baby my smoker to make sure it stays at the right temp. (it is a pretty shitty smoker though) It might look kind of funny though if while the fire department is called out there is smoke billowing out of the fire department itself. :whistling:

So guys - any ideas on getting into smoking? I don't have a smoker so I usually will slow roast then finish on the grill with the wood chips in a iron box. It works but I'm ready for more. I don't really want to go spend a fortune on a pro-smoker so any resources you guys know of about building on on the cheap?

I would go with this one. GREAT all around smoker, and you'll get good results out of it
