Old Fashioned Sugar Cured Country Ham

Anyone ever try this stuff??? Or should I say, anyone that isn't from or live in the South try this stuff???

Its one of the first "local treats" that I was introduced to when I first moved here. I believe that its really one of those aquired tastes, because the first time I tried it, it was in a biscuit as a sandwich and I shook my head in disbelief. I knew what Ham was, hahah, but I had never tried the country ham.

As time went on, I developed quite a taste for this stuff, and now its a pretty common breakfast item on the weekends. Even better, is that country ham slices are traditionally served with what is called Red Eye Gravy. basically, you fry the ham up in a skillet, and remove the ham, and pour in some black coffee to the drippings. So you know that the killer beans make a mean red eye gravy.

Because of the way the stuff is prepared/cured, it doesn't need refrigeration! hahahah MORE MEAT BOMBS!!!! I know of a few BOTL around here that would make a good Meat Bomb candidate!

Like Erick, I, too, was introduced to country ham when I first got to SC! Add a couple of eggs, some cheese grits, and red-eyed gravy, you're now talking breakfast. In addition to deep fried anything, killer bar-b-que, and the generous use of fatback, it's no wonder SC leads the nation in heart related problems! :whistling:
 
My Father in law cures his own. It is quite an interesting process. Hangs them in the barn for a few years. When I was some in process it was a bit unappetizing but they taste wonderful!
 
Whaaat? Country ham?? Man...raised on that stuff. I make a batch of buttermilk biscuits (approx 24), fry up about 10 slices of ham (I only rinse it a little, I likes mine salty), make ham biscuits and put 'em in the freezer. Grab one, microwave 40 seconds and bam! Country ham biscuit every mornin'! Do the same thing with sausage (Hot Weinberg round here, the BEST!). Several different brands of country ham around here too. Best I've had is Jr. Johnson's.

Ah hell, like Jay said, some grits, red eye gravy, easy over eggs, buttermilk biscuits, butter, lots of pepper...oh many I'm hungry! :laugh:

Red eye gravy - fry the ham til' caramelized, poor strong black coffee in the pan (still hot and sizzlin'), scrape up all the goodys, let it simmer and reduce 'til a good consistency. I pour coffee in several times and let it keep reducin'. Mmmm mmmm!!
 
Meat bomb....

If that's anything like tea-bagging, I learned my lesson after a dozen or so.... count me out.
