I think the point with the ending was effectively to show two sort of contrasting aspects of the show. That the Sopranos are at the end of the day 'normal' Americas (title was Made in America), for example Meadow repeatadly failing to parallel park like we see happen every day, showing all the normal people coming into the diner going about their business. And in contrast, we get a feel for the paranoia Tony must experience, never knowing if the next guy through the door is going to open fire, arrest him, be a friend or be nobody at all. I dunno how I feel about the ending but that is my take on the last scene at least.
