Smoked salmon is one of my favorite things. Well, salmon is one of my favorite foods. I enjoy it as sushi/sashimi, I warm-smoked it when I had a grill and in the Winter, I sometimes make my own sides of gravlax. One time while on vacation, I found some fantastic cold-smoked salmon and I ate so much that the next day...well let's just say passing a movement required no effort whatsoever.

BTW, AVB, what do you drink with the various versions of salmon?

We had a bottle of Louis Latour 2002 Montagny 1er Cru La Grande Roche (white burgandy) that the wife picked out with the fillet for dinner. Normally I just drink water to get the full salmon flavor but she likes wine.

BTW, AVB, what do you drink with the various versions of salmon?
