Asparagus-stuffed chicken thigh & Jasmine rice with lemon-butter caper sauce.

Trying out these boneless, skinless marinated chicken thighs from HEB Plus. Definite winner. Just really unbelievably super tasty. Stuffed it with fresh asparagus & Pepper Jack cheese.

Got a little extra fancy again today ....

Easy hack for this---I got a jar of gourmet prepared Hollandaise sauce & I fill one of the cups in my two-egg poacher with that. Five minutes and both are ready!
