I was truly lost today without the comforting sound of a football game filling the house while I went about my usual Sunday. We hadn't really planned anything for the Super Bowl yet knowing that we will end up at a friends party or with a last minute house full here. What are your plans for the big game but more importantly what are you cooking? I need some new appetizer and main course ideas so gimme your best football food recipes.

Mike's in-lwas are having a Super Bowl party like they do EVERY year...Wine, Beer, other beverages....then dips, heavy h'ordveors, things that I am gonna have to help her make...I will see if i can get some recipes...

One that is always a hit are the Jalapeno poppers there are two versions that I try depending on who will be attending.

1) Jalapenos stemed, halved, and seeded grilled on barbie filled with some cream cheese and cheddar.

2) Whole Jalapenos only stem them and cut the cap off (should come natural to a cigar smoker) leaving the seeds and viens should make this version hotter fill with cream cheese and wrap in partially cooked bacon and finish on the grill , both of these are quick and easy. Either way the cream cheese cools off some of the heat of the pepper.

Local rock station is having a huge party with a buffet and beer specials. Definitely there.

We usually do heroes, chips and dips and the usuall with soda and beer. After the game we bring out the hard stuff and some cigars. Enjoy your whatever you do!! :)

Always a hit - Sausage Stuffed Mushrooms

- Get a bunch of 1"-2" mushrooms. Wash / take the stems out.....just after the caps for this.
- Get some decent seasoned ground sausage. I've used Jimmy Dean in the past but use what you like.
- Roll the sausage into little round balls, about the size of the mushrooms (you can see where this is going).
- Put the sausage balls into the cap of the mushroom
- Put 'em in a flat pyrex dish and broil them until the sausage is done. I like 'em when the sausage on top is a little crispy.
- Throw some Parmesan cheese on the top of them while they are still hot.

Wash 'em down with ample quantities of your favorite grog.....

Cheers - B.B.S.

Or you can make a batter and deep fry them too. Delicious.

I alway smoke some ribs and make some chili. The rest is appetizers.

Those sound good, they are going on the menu! I also decided to try my hand at a few racks of ribs following the Hillbilly Steaks method. I figure if Tommy can do it anyone can.

I'm going to be smoking 3 racks of spare ribs using an apple glaze recipe. Maybe doing up a batch of stuffed jalapenos also.

I generally stay away from the Superbowl parties. Everyone I have ever been too, I ended up missing most of the game. I'll stay at home, have the wifey cook up some Gumbo, maybe do BBS's sausage stuffed mushroom recipe, smoke and drink until I have won all the cigars in the SB pool.

Gonna use tacquitos, layered with red mole sauce and cheese and baked like lasagna. Spicy guacomole on the side.
