Swissy's Salmon Spread

So, an impromptu St. Patricks day party at Casa Sanchez last night ended with a recycling bin full of dead soldiers and a ashtray full of cigar butts. Of course there was plenty of good food planned but I was craving Hillbilly Turkey Jerky and Swissy Salmon Spread, no time to make jerky but let's see what I can do about the Salmon Spread.

I remembered Jim's instructions for the spread, found some Swissy Smoked Teriyaki Salmon in the deep freeze and the other ingredients in the ice box. Hmmmmm ..... never tried this with the teriyaki salmon but let's see what it tastes like. Mixed the ingredients together and blended it to a nice creamy texture but it was still missing something ..... ahh, fresh cracked pepper. Oh my goodness!!! this stuff rocked and was the hit of the evening, also went very good with a Pinot that we were pouring. Everybody asked me what I called this spread and where could they get some, I told them it was Swissy's Salmon Spread and is currently in very limited production so they better enjoy it now, the small amount that was left went home with one of our guests.

I know I've said this many times before, but thanks again Jim! You'll have to try this with the Pinot that's headed your way.

Yeah this stuff ROCKS... Especially with some peppers added...

My wife inhales this stuff and I have to fight to get my few crackers worth. We've tried making it with salmon from the store but it just isn't the same.
 
Yeah! Swissy sent some down our way for the Baghdad Herf and it was delicious! Had to fight em for a taste or two! Nah! Swissy sent a truly generous helping and we ended up taking some home to drool over as well as the smoked salmon and other tasty treats!

Wow... sorry. Missed this thread while I was out of town! Someone brought it to my attention...

Ray, one reason it may not be the same is I HEAVILY smoke my salmon... way more than commercial smoked salmon. To get the same flavor you may need to double the amount of salmon you put in the recipe. (or cheat and add a drop or two of liquid smoke flavoring :whistling: )

Glad those of you lucky enough to try it have liked it... my stocks are almost nil right now, and I just found out my normal source for Red Salmon may be inaccessible to me unless I pay a charter for a drop off. Damn rainy fall and mudslides closed off the road to the Copper River - and it's not a state maintained road. Unless a few of us work on it to open it to ATV's it's either the charter or no Copper River reds this year :(

but I guess I'll have to go out on my boat more and intercept them on the high seas! :laugh:
