According to my pipe guru at the second shop, if you can't hold it to your cheek, it is too hot, stop for a bit and let the bowl cool so as not to damage the wood.

Agreed! Some briars will smoke much hotter than others just due to construction. Usually, they improve after a good cake is formed.
