What’s on the grill/smoker today? 2021

I've done these a few times and they've come out good, but not great. I need to trial and error a few more times.

It's like eating brisket on a bone, so low and slow is they way to go. I try to keep it between 225 - 250 and smoke until 205. Then wrap and let rest for an hour or so. Looking forward to seeing your experience.
 
How did they one out?
Dammit Chester, I was hoping that post would go away.... The meat itself was horrible. TONS of fat, lots of inedible parts. I would say 1, maybe 2 people could have been full from this. The rest of it was crap... I can't imagine it had anything to do with the way I cooked it but I suppose it could have.... Probably something I won't try again.

Oh wow, sorry to hear. But I'm taking notes on that....won't be buying myself that cut anytime soon.

Yeah I've had really bad luck with costco meat the last month. I won't be doing this cut anytime soon but when I do try it again I'll go to my local butcher and make sure I am starting with good meat.

I’ve never tried the plate ribs before. It’s definitely something I’ve wanted to do. I do have to agree with you on Costco though. The last brisket I did was probably the worst I’ve ever seen and it was prime from Costco. It was insane the amount of fat compared to any other brisket I’ve done. Not sure what happened because usually their beef is fantastic.

Sorry to hear Chad. I've typically had good luck with Costco meat. This guy always makes such great looking meals:
