Cast iron cooking

We have some cast iron in the house, and some in the trailer. Trailer ones primarily see open flame fires, but not as often as I would like lol.

As for cleaning, the wife does that. She has a method and seems to work good, and my method is to let her handle it!

Sounds like both of those methods work pretty well.
 
Just stumbled upon this thread. I'm a cast iron guy and have restored well over a dozen by electrolysis. My favorite pan is a Wagner heat ring guy that's a legit 12 in across and from the 30s probably.

I fill the pan w some hot water then put it on a burner until there is smoke on the water short of boiling then turn off the heat and let it cool down. Then i dump out the liquid and scrape w those scrapers that lodge sells. Then hot water and a plastic brush from $ tree in the sink followed by kosher salt worked around under one of those rectangle sos type pads w a handle for grills. Rinse then a quick coat w conola oil.

My wife whole heartedly swears by Le Creuset. They are quite expensive but the quality is great and I might be insane but somehow food cooked in these tastes better to me

Here is a little trick for those who might want to pick something up from them. Don’t buy in their original stores or online. There are quite a lot of outlet malls that have their store. Look for a holiday sale and might get away with buying a pice at 60-70% off the original price
The biggest trick is let the pan heat til it’s really hot, then add your ghee or tallow.

Nothing ever sticks. Eggs are fantastic.
We’ve had our cast iron for years and it’s all we use. It’s well seasoned and reseasoned almost daily. We never eat out anymore.

Did bread in the cast iron of course but the fresh milled flour totally destroyed my insides- way too much bran.
