We do a reverse sear ala Alton Brown. Bake covered to just short of temp then sear on the afterburner. Bullet proof.

Reverso dinner: Grilled Caesar salad and steak tartare. Although the wife loves rare steak, and even though we've eaten all sorts of weird things when we lived in Japan, nevertheless she was a bit squeamish about this. However, after a few bites, the tartare had won her over.

Rob, I often see things in this thread that make me want to replicate the dish. When I look at your posts, I just want to eat it because I know I can't replicate it.

I appreciate the compliment, but I don't have any culinary training. I have watched a bunch of videos from Chef Jean Pierre on Youtube, and he's always saying, "It's so easy a child could do it!" I just enjoy cooking and have practiced a bunch.

Like most things, I find "Creativity" being the most demanding factor. It should be easy to follow steps laid out, but to create something on your own, is what I have difficulty with!
 
Mrs Nihon baked a couple of pumpkins and made purée from the flesh. She ate some while I was gone last week and put the rest in the fridge. When I came home and found it, I got inspired to make something with the pumpkin.

Seared scallops with bacon bits, over a couscous apple salad and pumpkin purée.

OK, I know, looks like slop. But most Indian food looks like slop if you don’t have those fancy little pots to serve them in.

Butter chicken recipe but with chuck roast. Also air fryer cauliflower in Indian sauce. Very tasty. Better than it looks.
