Mrs Nihon and I are in Italy for a couple of weeks. As most of you know, I’m a foodie and I seek out interesting foods. A few days ago we were at the Vatican and stopped for lunch where I found stuffed squash blossoms and blossom and anchovy pizza. Mrs Nihon is not a fan of anchovy but she indulgent me and ended up liking both.

We rented a great Air BnB and we were at the market yesterday when I found zucchini blossoms, so I made slow cooked scrambled eggs with cream and zucchini this morning. Served with a nice bottle of local prosecco that we enjoyed on our roof-top patio overlooking the city of Rome. Happy New Year!

We were inspired to cook again while we were in Italy, so we visited a grocery store to see what we could find. I only know a few words in Italian, but I was able to ask the butcher if he had veal. He pulled out a top round from the cooler, put it on his board and pounded a trimming knife through it and into the cutting board to hold the roast in place while he sliced me two scaloppini. We gathered a few other local ingredients, including fresh lemons, and headed back to our flat.

Antipasti: Spinach salad with pears, walnuts, red onions and blue cheese.

Primi: Gnocchi stuffed with mushrooms and sausage, with a mushroom and brown butter sauce

Secondi: Veal scaloppini in a white wine, caper and mushroom sauce.

Looks amazing Rob! Just so you know, our Wegman's carries Caputo Italian brand flour. Charleigh & and Donella who are gluten free/intolerant have zero issues with anything using this product. I make the best bread machine loaves ever with it. 🙂
