4 c flour
2tsp salt
2tsp baking powder
Mix
Cut in 2/3 c shortening
Hollow out middle
2C milk
Stir
Knead flour in

Really, it's just a biscuit recipe. So same concepts apply. We grew up liking our dumplings with some bite, so work the dough a bit to develop some gluten. Roll out about a quarter to half inch thick. Cut with pizza wheel. They will puff up, so make sure you have head room in the stock pot.
