I don't think it really qualifies as too far off the beaten path in Texas, but going off the things you listed I would add Carnitas - pretty easy to get those right.
A pivot point off of those Mexican dishes might be some Salvadoran food - seafoods roasted in garlic and butter, also plantains.
Regarding participation...
There's only so many guys that can stand in a circle and still have their penises touch.
Also CJ complains when I mention him in a post. So ignore the fact that I just mentioned CJ in my post.

I second Joe's list including blackstar but that's a bit away from soco.
If it's beer selection you're after the whip-in is another good choice on the south side.
And add mueller's BBQ on east 6th if you don't want to chance Franklin's ...
Also add curra's grill if you're into carnitas...
