Got a new toy today. I’m new to the world of offset smokers but I’m excited to figure it out. Just getting it seasoned tonight.

Yeah. I noticed that immediately. Kind of scary. It’s the screws for the handle & the built in thermometer.

Sous Vide Prime Filet’s, Lobster Tails, and a nice salad. I’m miserably stuffed for a guy who didn’t eat any carbs and such a small steak.

Doing 30 lbs of burnt ends from pork butts!!!! Have 52 people coming over tonight from my sons baseball team for food and fireworks!
My puppy is not pleased with the fireworks but he’s getting through

STL ribs for my first time using an offset. Temp regulation has been an adjustment but I’ve stayed within 10 degrees of my target for the first few hours. Hopefully they don’t suck

Chicken thighs marinated half in white and half red sauce

veggies ( later salt, pepper, olive oil and a bit of balsamic )

Skirt steak and sausages

baby lamb chops ( chalahach in Russian ). Super tender and very fatty meat. The trick is to have the fat melt away without burning the meat

And finally mozzarella buffata with heirloom tomatoes

Cedar plank wild king salmon with smoked paprika, brown sugar, black pepper, and dill. Paired it with wilted spinach, and fresh garden green beans/bacon/new potatoes.
