Smoked a brisket for Mother’s Day. Tried smoking it at 250 instead of 225. Saved some time and had it resting before company showed up. I took the end pieces (thats why the photo looks on the dry side) to ensure my parents and the in-laws got the best slices. Everyone was happy with it. Therefore I am happy with it 😎
