Smoked a brisket for Mother’s Day. Tried smoking it at 250 instead of 225. Saved some time and had it resting before company showed up. I took the end pieces (thats why the photo looks on the dry side) to ensure my parents and the in-laws got the best slices. Everyone was happy with it. Therefore I am happy with it

NY strips. Smoked for about two hours with charcoal pellets and then seared on the gas grill. I think next time we’ll just end up splitting one

Italian sausage stuffed with provolone, fresh parsley & garlic powder. Served with risotto & broccoli rabe.
