What? You've never tried them?

2 cups sugar
1/2 cup milk
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
3 cups old-fashioned rolled oats
1 cup smooth peanut butter
1 tablespoon pure vanilla extract
Large pinch kosher salt


  1. Line a baking sheet with wax paper or parchment.
  2. Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
  3. Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

I've found that the old fashioned oats, work much better than instant oats. The old fashioned oats, still have a "bite" to them where the instant oats don't. But it's best to experiment, on your own!

That's it right there. Pretty sure it was a recipe on the oats box back in the 70s. I grew up in New Mexico eating them every holiday and I'm sure it's all over the US now.
 
Went apple picking today, and decided to make some apple hand pies. Homemade, super flaky crust. The flavor of the apples and the crust remind me of McDonald's apple pies, but less sweet. These things are dangerous....I have another batch in the oven too....

Also made (no pics though) a huge pot of chili and a pressure cooker full of Chicken Cacciatore. Dinner for the next three nights!
 
Went to the store this morning and they had some of the biggest jalapeños I’ve ever seen. Jalapeño Poppers it is!!

Stuffed with cream cheese, cheddar and jack, and some chorizo and breakfast sausage mixed up. Smoking them for an hour at 180 then going to crank them up to 375 for about 30 minutes to crisp up the bacon.0494E39C-ADFE-4AF6-B093-0FE6ACE6BE20.jpeg

Damn!! I LOVE jalapeno poppers! And those look SO good! Never would have thought to wrap them in bacon and grill them. Fantastic idea, one that I will have to try in the near future!

Highly recommended! You don’t really need to worry about the sausage filling I just figured I’d step them up a tad today. Just toss them on indirect heat around 375-400 for 30-45 minutes and they are always a hit. My wife’s favorite
