Just an update... been drinking my beer basically every day, and the longer this sits, the better (and clearer) it gets!

I make a sort-of glaze for salmon, more of a reduction really.
Very thinly slice half an onion, and saute in about 1tsp olive oil, until it begins to caramelize. Add about 1/2 cup balsamic vinegar and about 2 Tbsp of good honey. Simmer to reduce by at least half. Spoon over pan seared...

Be prepared to make a lot of phone calls to get your business going, it's definitely tough at first but if you keep at it you'll be successful.
Ah, almost forgot about River Horse (Lambertvill, right?) Very nice brew. Can't get it up here, I'll have to have my parents bring some up from Jersey when they visit next month.
Couldn't resist a little taste test. I put one of the bottles in the fridge yesterday and popped the top today (11 days in the bottle so far). It's very tasty, and actually carbed up quite well. Though it could still use some more time, I actually can't believe how good this turned out...
I don't necessarily see the point of an 80proof beer, but hey - why not? Right?
