Has anyone ever frozen armadillo eggs? I made too many and I don't want them to go to waste.

I did and they weren’t the same. The cream cheese gets kind of funky after you freeze it.
ETA: Still edible, but just not as good.

For sure, it’s the only way I do it. Even in the winter if I don’t feel like digging out the smoker, I’ll slow cook it in the oven at about 160 for two hours or so and then sear it in cast iron or on the grill. So much more tender.
